Today is another guest recipe day! Well, technically not a guest recipe. It is my experiment. Hehehe. The recipe is for sweet potato pakoras! This is a recipe I came up with one day while trying to remember and recreate some older recipes. Anyways, everyone at home really liked these pakoras and they were gone in minutes. They are crispy on the outside, soft inside, sweet and spicy at the same time. Nothing wrong with that!
This is a really easy recipe. First sweet potatoes have to be washed, peeled and sliced. They should be sliced into circles much like making chips. Then a tight batter gets made with pea flour or you can use chickpea flour too. Have I mentioned how much I love working with pea or chickpea flour? Each slice should get lightly covered with batter. Then the slices are deep fried in vegetable until light golden brown. Drain on paper towels and they are done!
They should be crispy on the outside and fully cooked inside. So delicious!
